Happy Valentine’s Day!
What do you do for Valentine’s Day? Chocolate, flowers, a nice dinner, jewelry? For me, it’s pizza, German chocolate, Italian wine, watching Wall-E, and insisting Will doesn’t need to get me jewelry.
Other years, though, I like to make my own chocolate. I know I can feel good about the sweetener used and there are no sketchy ingredients like soy lecithin.
Most homemade chocolate recipes I come across have coconut oil in them. However, I’ve tried this and I really don’t like it. I am not a fan of the flavor. But more importantly, even though I kept the chocolate in the freezer, it would melt all over my hands as soon as I picked up a piece.
So, even though I know coconut oil is a “super food,” I prefer my chocolate to be made with food grade cocoa butter. I use honey as a sweetener. I use 1/4 cup because I prefer a more bittersweet chocolate, while a 1/2 cup would be sweeter.
Finally, a bit a vanilla adds a good flavor, but almond extract, mint extract, or a few drops of peppermint oil (buy it here) can also be delicious.
This homemade chocolate is quick and easy to make and great for all of your chocolate needs!
Homemade Chocolate
Ingredients
- 1/2 cup cocoa butter
- 1 cup chocolate powder
- 1/4-1/2 cup raw honey, to taste
- 1 tsp vanilla or other flavor
Instructions
- Melt cocoa butter over medium in a double boiler.
- Add remaining ingredients and combine.
- Line a baking sheet with parchment paper and pour chocolate onto paper.
- Place in fridge until hardened.
- Break up hard chocolate into pieces and store in an airtight container. Chocolate will not melt at room temperature, but keeps best in the fridge.
- Enjoy in cookies, with nuts, plain, or however you like chocolate!
